Hofkäserei Kraus

Albert Kraus and his team have been producing cheese from the best Allgäu milk since March 1999 at the Hofkäserei Kraus cheese dairy in Ebersbach near Obergünzburg. This milk comes from two traditional farms, just five kilometers from the cheese dairy, and their Allgäu Brown Swiss herds.

They deliver the milk fresh every day to the cheese dairy, which uses it to produce a whole range of Allgäu cheese specialties in a traditional way and lets them mature for three to 18 months.
